If we're gonna shit on bands we find overrated, we might as well praise underrated bands.
Rammstein - Bashed by the media and asshat web trolls alike, for being considered Nazi by ignorant Americans, for reasons unclear by the German newsgroups and shit (may be Weisses Fleisch describing child rape, and their overuse of sexually portrayed lyrics generally), but these guys kick ass all the way to the edge of the universe.

Local H - They've faded into obscurity, but they're one of the last remaining, pure rock/alt-rock bands left nowadays in my opinion. They have a concert dvd coming out soon, I'll be jumping all over that. Wasn't a fan of their latest album though.
Sister Machine Gun - Industrial Band that left the classic industrial label Wax Trax (Owned by TVT Records) after they (or Chris Randall) became frustrated with the music industry. Continued to release albums under their self created label, Positron, and subsequently signed on other, indy bands.
VAST - An intellectual version of U2, they never really caught on.

Mindless Self Indulgence- Still can't praise these guys (and girls) enough. Their unique blend of punk, metal, rap, and electronica is only made better by their willingness to make jokes about nearly anything.

Combichrist- An Aggro-Tech/TBM project from Norway that is all kinds of awesome. Between the sirens, heavy drum usage (they require two people to play the drum when they preform live), and other various loud noises, these guys surprised me when they blended two styles of music I normally avoid and turned it into something awesome

Black Light Burns- I'll admit, I was pretty skeptical when I first read about BLB, after all, the lead singer and guitarist was the guitarist for Limp Bizkit. Other then that, it was two guys from past incarnations of NIN and some guy I had never heard of, so when I first heard of them I ignored them. I recently endded up seeing them live at a Combichrist concert and picked their album Cruel Melody, and was surprised at the quality.

The Birthday Massacre- Their name makes them sounds like some shitty emo band, but names can be deceiving. Between the lead singer's amazing voice and the best use of rhythm guitar I have had the pleasure of hearing. Their lyrics are similar to the stuff, so if you don't like that style of writing, you probably won't like them.

Shing02- This one is kind of cheating, as if you have ever seen Samurai Champloo, then you have heard him (he is the guy doing the vocals for for the opening song), and he has been fairly well received in Japan, but I am the only person I have met in the states who knows his name, so on this list he goes.

Dillinger Four- These guys have to be some of the best lyricists out there, and their second album is easily one of my favorites of all time. Unfortunately, everyone shuns them because they're "pop-punk" or whatever, even though their song "#51 Dick Butkus" kicks more ass than any hardcore or metal song I've heard lately.
Butthole Surfers- I just fired up "Electriclarryland" on a whim the other day, and am surprised how still original and awesome it sounds. Definitely one of the few weird rock bands that aren't totally annoying.
Husker Du- They're not together anymore, but they definitely don't get their due. Talk to any good band from the 90's such as Nirvana or Pearl Jam who their influences were, and I guarantee you that most of those musicians will put them up their. Zen Arcade is one of the best modern rock albums of all time, and basically created grunge.
So here's to you Mrs. Robinson. People love you more- oh, nevermind.

There are a bunch of underrated/overlooked metal bands I've been checking out lately.
Diamond Head-EvilWii said it already, but it has to be said again, this band never got the props they deserved. (Well, until Metallica came along and covered half of "Lightning to the Nations.)
Incubus-Not the funk rock band, but the death/thrash band that released "Serpent Temptation." Great, overlooked stuff.
Hirax-Really good crossover/thrash. Katon W. DePena has one of the most unique voices in thrash.
Exhorder-Oh hell yes. Exhorder is some of the most pissed-off groove/thrash I've ever heard, and Kyle Thomas is one of my favorite vocalists. Albums like "Slaughter in the Vatican" could be used against me in court if I ever kill anyone.
Morbid Saint-"Spectrum of Death" is an amazing album, the vocalist sounds like Satan himself. Highly recommended for death/thrash fans.
Broken Hope-This band gets trashed for being generic death metal, but it is generic death metal, and that's what makes it good. It's straight to the point and simple, and that's why it works.
Overkill-Overkill just never got the props they deserved, plain and simple.
Budgie-Also an overlooked band that everyone knows only because Metallica covered them. Plus, they're currently located in San Antonio, so whenever they get back from touring, I'll have to track them down. Haha.
Sadus-One of the first technical thrash bands. Much ass-kickery is contained within.
GWAR-People say GWAR is only about the visual, but their music kicks ass as well.

Billy Corgan (his solo album is grossly underrated)
Coldplay (for the simple reason that everywhere I go, people say stuff like "Blah blah blah, they're too contemporary, they're too formulaic (um, what?), etc." Sure, they've been nominated for awards, but I literally don't know a single other person who likes them.)

I actually didn't even list any black metal bands. There's some death metal there, but most of it's thrash. Diamond Head and Budgie are classic metal, though, and GWAR kinda varies per song.
Black metal isn't underrated because most of it sucks ass, in my opinion. Hence, it's overrated.
EDIT: I should also put in Voor and Demolition Hammer. I love those guys!

Tool is definately. They'd have more success if they had more casual songs, they aren't for the casual listener which I like.

I would also say Meatloaf is very underrated. I have heard many people hate on him, but I place him in my favorite artists (even if he doesn't write his own music, which is a bummer.) I want "Bat Out of Hell" played at my funeral.

I would have to say Manowar. Now I'll admit I don't know much about metal as a scene, I just love the music. But Manowar is one of my favorite bands, and every time I mention it, all I get is shit. Granted the loincloth, beer hall, mainline-testosterone-straight-into-your-eye thing can get a little goofy, and their lyrics aren't always the best (although some are inspired), but I can't believe more people (read: Americans) can get passed that and to the complete awesomeness that Manowar embodies. Eric Adams alone is the shit. I mean c'mon.

L.A. Guns!!!! The Tony Martin-era Black Sabbath, David Lee Roth's solo stuff, Lenny Kravitz as a musician, and Sixx A.M.
I'm tempted to yell "MICHEAL JACKSON!" here. He's got a major media shitcan after being accused of being a pedophile, but his music was still pretty good.
